Ingredients
  

  • 2 slices of thick-cut sourdough or whole grain bread
  • 2 tablespoons softened butter
  • cup cottage cheese
  • 1 ripe avocado sliced or mashed
  • 2 teaspoons fresh lime juice
  • ¼ cup toasted pecans roughly chopped
  • 1-2 tablespoons hot honey adjust to taste, or use regular honey
  • ¼ teaspoon flaky sea salt
  • ¼ teaspoon cracked black pepper
  • Optional: A sprinkle of red pepper flakes or cayenne for extra heat

Instructions
 

  • Toast the Bread – Butter both sides of the bread and toast in a skillet over medium heat until it's golden brown on both sides.
  • Spread the cottage cheese – Divide the cottage cheese evenly between the two slices of toast.
  • Add the avocado – Mash the avocado and add lime juice. Spread it gently over the cottage cheese.
  • Sprinkle the pecans – Scatter the toasted pecans evenly over each slice.
  • Drizzle with hot honey – Drizzle a bit of hot honey over the top.
  • Season and serve – Sprinkle with flaky sea salt and cracked black pepper. If you want extra heat, add a pinch of red pepper flakes or cayenne.

Notes

Don't skip toasting the pecans - This brings out their natural sweetness and crunch. If your pecans aren't toasted, spread them out on a microwave safe plate and microwave in one-minute increments, tasting after each. It usually takes 2-3 minutes.
Use good-quality, sturdy bread – A hearty slice makes all the difference.
Drizzle, don’t drown – A little hot honey goes a long way! Start with a drizzle and add more if needed. If you are not sure about hot honey, use regular honey. It's delicious too!
Season well – A pinch of flaky salt and black pepper makes every bite pop.
