Instructions
Preheat your oven to 350°F. Spray a 9x9-inch baking dish with cooking spray.
Pour the undrained 29-oz. can of peaches into the baking dish. If using two 15-oz. cans, drain one can before adding it.
In a medium mixing bowl, whisk together the cake mix and cinnamon. Evenly sprinkle the mixture over the peaches.
Stir the vanilla into the melted butter and drizzle it over the cake mix. Use a fork to gently mix it in so no dry spots remain. If needed, place 3-4 extra tablespoons of butter cut into thin slices on top to help everything bake evenly.
Bake for 40-45 minutes, until the top is golden brown. If the cake mix still looks dry at 40 minutes, gently mix with a fork, creating holes in the mix where the peach liquid can bubble up, and bake for another 5-10 minutes until fully cooked. When done, remove it from the oven and use a pastry brush to brush the top with the remaining tablespoon of melted butter.
Optional: While the cobbler bakes, whip together one cup of heavy cream, a quarter cup of sugar, and one teaspoon of vanilla until fluffy.
