Ingredients
  

Cobbler

  • 1 can peaches, 29 oz. or 2 cans peaches, 15 oz. (drain one can)
  • 1 box yellow cake mix
  • ½ teaspoon cinnamon
  • ½ cup butter, melted
  • 1 teaspoon vanilla
  • 1 tablespoon butter, melted

Optional Whipped Topping

  • 1 cup heavy cream
  • ¼ cup sugar
  • 1 teaspoon vanilla

Instructions
 

  • Preheat your oven to 350°F. Spray a 9x9-inch baking dish with cooking spray.
  • Pour the undrained 29-oz. can of peaches into the baking dish. If using two 15-oz. cans, drain one can before adding it.
  • In a medium mixing bowl, whisk together the cake mix and cinnamon. Evenly sprinkle the mixture over the peaches.
  • Stir the vanilla into the melted butter and drizzle it over the cake mix. Use a fork to gently mix it in so no dry spots remain. If needed, place 3-4 extra tablespoons of butter cut into thin slices on top to help everything bake evenly.
  • Bake for 40-45 minutes, until the top is golden brown. If the cake mix still looks dry at 40 minutes, gently mix with a fork, creating holes in the mix where the peach liquid can bubble up, and bake for another 5-10 minutes until fully cooked. When done, remove it from the oven and use a pastry brush to brush the top with the remaining tablespoon of melted butter.
  • Optional: While the cobbler bakes, whip together one cup of heavy cream, a quarter cup of sugar, and one teaspoon of vanilla until fluffy.
  • Let the cobbler cool slightly before serving. Top with whipped cream or a scoop of vanilla ice cream for the ultimate dessert.

Mix the butter in slightly: This helps avoid dry cake mix patches on top.
Check for doneness: If the topping looks dry, gently poke holes with a fork to let the peach juices bubble through.
